BAKERS Boudoir Biscuit Train Cake & Track

Toot toot! It’s time to hop on board the biscuit train. The next stop? A sweet biscuity wonderland! Made from a magical mix of Bakers most-loved biscuits, everybody will be delighted to find their favourite.

1 sheet cake  
1 Swiss Roll  
Butter icing (1 x 500 g Stork Bake to 1.5 kg sifted icing sugar)  
Green, yellow, blue, and red, food colouring  
1 packet liquorice rope  
200 g Bakers Nuttikrust biscuits  
150 g packet of Bakers Choc-O-Break biscuits  
1 packet of marshmallows  
1 skewer  
To decorate: Boudoir Biscuits, Bakers Zoo, Bakers Gossips, Bakers Ginger Nuts, Bakers Jolly Jammers, Bakers Topper, Bakers Romany Creams, Bakers Romany Tarte, Bakers Eet-Sum-Mor (all these are optional – you can use biscuits as you prefer for decorating)

1. Bake a rectangular sheet cake according to any recipe. Alternatively, buy three ready-made loaf cakes.
2. Make the butter icing according to the ratio 1 x 500 g Stork Bake and 1.5 kg sifted icing sugar. Beat with an electric hand beater or cake mixer until smooth, well combined and fluffy.
3. Take one third of the butter icing for the train engine and divide the rest into three other bowls equally. Add different food colouring to each bowl and mix until combined.
4. Cut out three rectangles of sheet cake of the same shape (13 cm x 10 cm) and hollow out a rectangle at the top (9 cm x 5 cm).
5. Cut one loaf cake in half lengthwise (or a piece of sheet cake to this size) to create a flat base for the Swiss roll with space behind it for another rectangular upright piece.
6. Cut a rectangular block to place behind the Swiss roll to create the engine room, place behind the Swiss roll on the rectangular base.
7. Use a marshmallow to create the funnel on top of the Swiss roll, or create a funnel shape piece of cake. Put in place with some icing.
8. Using liquorice rope and Bakers Boudoir biscuits, create the train track.
9. Ice each rectangle a different colour and place each iced ‘carriage’ on the track. Join the carriages with Bakers Romany Creams.
10. Ice the Swiss roll portion and loaf cake to create the engine.
11. Place the iced marshmallow or iced funnel piece of cake on top as the funnel and top with Bakers Romany Tarte (if you have).
12. Skewer white marshmallows alternating the centre to left and right to create smoke to put into the tunnel.
13. Outline the edges with liquorice.
14. Use a Bakers Jolly Jammer to add a smiley face, Bakers Topper to create a fender, Bakers Romany Creams for coal on the engine, and Bakers Eet-Sum-Mor for a window (optional).
15. Make the wheels by sticking a Smartie onto a Bakers Choc-O-Break biscuit with some icing.
16. Stick the wheels onto each carriage with some icing.
17. Fill each carriage with Bakers Gossips, Bakers Zoo, and Bakers Ginger Nuts. Alternatively, you can use any biscuits of your choice to fill the carriages.
18. Decorate the tray with Bakers Nuttikrust as the gravel next to the tracks (optional).
